(sort of like) Thai Green Curry

Ingredients

  • One big bit of ginger, sliced - no peel

  • A handful of dried lime leaves

  • 2 bits of lemongrass, sliced up

  • 3 cloves of garlic

  • 3 dried chillies

  • Stock of whatever kind you prefer.

  • 2 cups coriander

  • Light soy sauce for salt

  • Chilli oil

  • 3 limes

  • 2 tins of coconut milk

  • Whatever blanched veg or protein you like (tofu, mangetout, green peppers, bok choi, those mini corns are good, go with your heart)

Method

1. Add everything but your half of your coriander, chilli oil, limes, coconut milk and protein/veg to a big pot simmer for a while, let's say half an hour?

2. Taste and season with light soy sauce and strain the solids off.

3. Blanch your veg and fry your protein (I recommend tossing firm tofu in corn flour, frying briefly and finishing in the oven)

 

4. Add your coconut milk, the zest of your limes, as much coriander as you can stand, your veg/protein lime juice and chilli oil to taste.
