
Cauliflower Curry
Ingredients
3 medium onions
1 pepper, whatever your favourite colour is.
1+ chillies to taste - never zero
1 teaspoon each of ginger and garlic paste
1 teaspoon each cumin, coriander powder, garum masala and turmeric
1 tin coconut milk + 1 of water
1 head of cauliflower
Method
1. Fry onions in (vegan) butter until translucent/soft. Reduce heat to medium-low, add dry spices, stirring until dry.
2. Add ginger and garlic, stir until very fragrant.
3. Add coconut milk and water, mix thoroughly followed by cauliflower
4. Cook until cauliflower has reached desired tenderness (cauliflower is always good so ya could let it cook for a week if you wish) garnish with coriander and serve with tiny naans from lidl.
